Oxidative Stability and Microbial Ecology of Fresh Beef with Extremely Long Shelf-Life

This study was aimed at assessing the pigment and lipid stability characterising microbial ecology by classical methods metagenetics in beef with an extremely long shelf-life. Bovine longissimus thoracis et lumborum subprimals from different origins (Australia, Brazil, Ireland, United Kingdom), displaying a shelf-life 35 to 140 days vacuum packaging, were aged −1 (subzero storage) or −1/+4°C two-level stepwise scheme. At times, samples repackaged under high-oxygen atmosphere (70/30% O2/CO2) stored 4°C for two then 8°C five simulate retail distribution. Subzero storage inhibited growth of total aerobic mesophilic flora Enterobacteriaceae during ageing ( p < 0.001 ). During simulated distribution, limited metmyoglobin formation excessive lactic acid bacteria growth. Classical microbiological underestimated count. Nonetheless, evidenced, specifically Australian samples, high proportions Carnobacterium maltaromaticum, bacterium that may have contributed beef.
